Air Fried Jacketed Baby Potatoes

If the potatoes are fresh (as in freshly harvested) …I have always preferred them cooked with the Jacket 0n. The crispy skin flavours add another dimension to the fresh potato taste.

Being a keen kitchen gardener, both at the home terrace & at my farm, I have the advantage of having access to baby potatoes almost four months a year (since I, deliberately, practice staggered sowing). I prefer harvesting them at this stage, because only here one can enjoy the freshness of the young potatoes. To allow the potatoes to fully mature before they harvest, and then can be stored for a longer period, doesn’t make sense since the mature potatoes are available in the market round the year anyways.

Cooking and consuming absolutely freshly harvested potatoes is an experience beyond words. One really needs to do it to realise what I am raving about.

Method

Soak the baby potatoes in water for a couple of hours. This allows to easily scrub off ant soil adhering to the skin. Scrub & clean all potatoes, individually.

Prick all the potatoes with a fork all over.

With a sharp knife, put quarter deep cuts on the potatoes. Be careful to not to cut through the potato fully. Pat dry.°°

Sprinkle salt, saunth, kashmiri mirch powder, chat masala & the oil over the potatoes. Mix thoroughly.

Let the marinated potatoes rest for a couple of hours to allow the marinade to seep in.

Preheat the Air frier. At 180°C.

Place the potatoes inside the Air Frier, leaving the liquid behind, and cook for 10 minutes at 180°.

Add 2 tbsp of cornflour in the marinade liquid left behind. (this measure can be increase or decreased depending upon the left over marinade. We just want a thickish paste made)

After 10 minutes in the Air Frier, take out the potatoes. Mix well with the thickened marinade paste.

Air Fry again for 8 minutes at 180°. And then at 200°for 4 minutes. (It is advised to keep shaking the potatoes throughout the cooking process, for even cooking)

The result is mouth watering, crispy skinned, Chatpata masala aalu, hardly any oil present.

Enjoy with a delectable dip made out of hung curd, crushed garlic, salt, crushed pepper.

You’ll love it.
